Black Bean Fajita Wrap


Good evening! The week has been a little hectic, and I honestly don't even know why. A lot has been on my mind lately, I guess. I have a big class presentation next Monday that has literally been consuming every bit of me. I graduate in approximately 1 1/2 months..which is not only exciting, but nerve-wracking as well. 
Anywayyyzzz this is a little creation I made at work- in this picture, the wrap is not necessarily gluten free, but obviously a corn tortilla could work or any gluten free tortilla would make do. 
Also another little note to this delicious fajita- the amounts miggghhttttttt be a little off because I make these for approximately 6-8 servings at good ol' Cafe Laura :]

Black Bean Fajita Wrap
glutenfree~vegan
2 corn or gluten-free tortillas
1-15oz can black beans, rinsed and drained
2 peppers (I would do 1 red and 1 yellow- it'd be pretty!), sliced and seeded
1 red onion, sliced
2 cups romaine lettuce, chopped
1 tablespoon chalula's hot sauce
1/2 jar tostito's mild salsa
1 tablespoon vegetable oil
salt and pepper, to taste

1. Saute the peppers and onions in a large skillet pan with the vegetable oil, hot sauce, salsa, salt and pepper
2. Put in a container, unopened, and let it cool. 
3. To assemble, place tortilla flat. put however much lettuce you want in the middle, then take however much black beans on top of lettuce, then your cooled fajita mixture. wrap it up and cut down the middle!

Raw Taco Boats

Happy Friday everybody! I'm going to have to make this short and sweet because this weekend Bill and I have off so we are going to visit his family. And it's also Friday and beautiful out and Nascar weekend so we need to head out asap! 

Bill had a half day of work, and wanted me to make him some grub before we headed out. Usually when he goes out of his way to ask me to make food, it usually means that he doesn't want a fried, fatty, processed food filled with meat and gluten. So I instantly hopped on this opportunity to make us a light little lunch! 

Recently, I've been fascinated with the Raw Food Diet, and I've been testing out a few recipes here and there to see how it is, and it's not bad at all! However, my current arch enemy has to be potato chips, because they are everywhere in my house and I can't get enough of them !

This recipe was inspired by a post in the blog Pickles n Honey - with my little twist to things!


Raw Taco Boats
Serves 2
1 cup chopped walnuts
2 Tablespoons Chili Powder (I use mexican chili powder)
1 Tablespoon Cumin
2 Tablespoons Namashayo Coconut Aminos
6 Vine-Ripe tomatoes, sliced 
White of 1 scallion, sliced
1/4 cup carrots, sliced
2 handfuls bean sprouts
2 romaine heart lettuce leaves

Mix walnuts, Chili Powder, Cumin and Coconut Aminos together and set aside
To set up: place your walnut mixture, scallions, carrots, tomatoes and bean sprouts in your lettuce boat

Happy Healthy Tacos D:

I've been so busy all week! Iggy has been keeping me preoccupied when I am not studying. I'm so frustrated because I'm worrying about a MICROBIOLOGY class...I'm a nutrition major, I'm never going to be explaining to anyone the transcription and translation process! Oye. Anyways, no complaints! This week has been so beautifull! And Bill, Iggy and I have been kicking it back, enjoying the opening season of the Phillies, watching the masters and sixers! 

We're going home for easter this weekend and we needed something to make to use up most of the food that might go bad. So we came up with Tofu Tacos! We made a huge mixture of peppers, tofu, black beans, corn, and tostitos salsa and then my homemade taco seasoning and made our own tacos- delish! It was a very simple recipe, but I'll give you the recipe for my homemade taco seasoning- it's so much better than the store brands and it is so much cheaper- since you probably have all these spices on hand (and if not- you are definitely going to be using them over and over again)

Taco Seasoning
2t Garlic Powder
2t Onion Powder
2-3t Chili Powder (I love ancho-chili powder)
1t Red Pepper Flakes
1t Smoked Paprika
1 1/2t oregano

Use with anything..I rubbed it on the tofu and then cooked it with the veggies!
